Courses
The Business of Cannabis
Do you want to start or own a hospitality business that serves cannabis or cannabis-infused products? This course will help students understand the emerging role cannabis is playing in the hospitality industry. There will be a general overview of cannabis laws and regulations and how legal cannabis is being incorporated into foods and beverages. The course explains the ground rules for developing, marketing and selling cannabis-based products and gives students the opportunity to propose their own product ideas. Note: Cannabis-based food and beverage preparation will NOT be covered in this course.
Course Outcomes: This 4-week course meets once a week via Zoom and includes a critique of students’ business proposals.
Learning Outcomes
- Recognize the basics of the pharmacology of the cannabis plant.
- Explain the federal, state and local cannabis business compliance and the nuances of serving it in the hospitality sector.
- Describe the complexities of cooking with THC and identify products associated with Cannabis use.
- Anticipate cannabis trends nationally and statewide.

Virtual and Hybrid Events

As the in-person events industry pivots to digital delivery, many event professionals are unprepared to take advantage of the opportunities this new environment presents. This course is designed to help event and other business professionals gain the necessary competencies to produce successful virtual and hybrid events. Participants will learn step-by-step how to create an effective virtual or hybrid event that satisfies organizers, attendees and sponsors. Faculty includes practitioners, service providers and other guest speakers sharing the latest thinking on how digital technologies are transforming the event space now and into the future.
Course Outcomes: 5-week online remote course with access to an online learning community. All participants receive a copy of The Digital Event Manual (Pdf) by John Nawn, course facilitator and event-industry thought-leader.

Resilient Leadership in Hospitality

The hospitality industry is experiencing unprecedented disruption due to the COVID-19 virus and some are facing existential challenges. This course is designed to promote resilient leadership for the unique needs of the hospitality industry and provide strategies and tools hospitality professionals can use immediately. The course is led by the faculty of Kendall College and explores the leadership, cultural, risk management, innovation, stakeholder engagement, and financial challenges currently facing the hotel, food service, events and tourism industries. Course Outcomes: This is a 6-week, self-paced noncredit course providing 40 hours of online instruction, reflection and assessment. Two videoconference sessions with faculty take place at strategic points in sessions.
Participants who complete the course will receive a Professional Certificate in Resilient Leadership in Hospitality and earn 1.5 continuing education units (CEUs).
Learning Outcomes
- Define resilient leadership and recognize its value in times of disruption, change and uncertainty.
- Explore effective strategies for maintaining the service culture through the change cycle.
- Explain how to design resilient business models to reduce risk and promote adaptability.
- Identify opportunities to innovate, redesign and re-imagine services to meet changing customer and employee expectations.
- Consider financial planning tools and tactics to maximize resilience.
